Heat a skillet with oil and butter on high heat
1 Cut zucchini into french fries sized strips
2 Crack the egg in small mixing bowl and whisk with a fork until light yellow in color. Spread breading on a plate
3 Coat the zucchini with egg and roll in breading. Place on paper towel
4 Fry in oil/butter mixture until golden. If the fritters are not completely covered by oil, turn them so all sides are equally fried.
