1 Place almond flour, salt, and baking soda in a mixing bowl and stir
2 Place eggs, almond milk, fiber syrup and vinegar in a separate bowl
3 Whisk egg mixture about 30 sec
4 Add dry ingredients to egg mixture and whisk for another 1-2 minutes until mixture resembles cake batter
5 Heat griddle over medium heat and melt coconut oil
6 Fill a measuring cup (1/4 or 1/3 cup depending on what size pancake you want) with batter and pour into griddle.
7 Cook until upside of pancake is bubbling, then turn and cook for 1-2 minutes
Serve with fiber syrup and butter and enjoy
