1 Preheat oven to 350℉ (175℃) and line a baking sheet with parchment paper
2 Place mozzarella, cream cheese, and butter in a microwave-safe bowl and microwave on high for 90 seconds
3 Mix almond flour, salt and psyllium powder in a bowl
4 In a separate bowl, whisk eggs until fluffy (2-4 min using electric whisk)
5 Mix yeast and water in a small microwave-safe bowl and microwave on high for 15 seconds.
6 Add dry mixture and yeast to eggs and whisk for 1 minute with the dough hook attachments. Scrub down edges with a rubber spatula and stir. (mixture should be moist and sticky but not runny, like almond paste.
7 Dip a measuring cup (I recommend 1/3 or 1/2 cup) in cold water, fill it with batter and drop onto baking sheet. Using wet hands, shape to buns of your choice. Makes 6-8 buns
7 Bake for 15-20 minutes (Buns are ready when golden and “bouncy” when pressed on)
Tip: Sprinkle sesame seeds on buns before putting in oven
For hot dog buns: Use a wet rubber spatula and shape into a log as you gently drop batter from measuring cup.
