1 Break or cut cauliflower into golf ball size florets
2 Chop bacon into 1/4 inch pieces
3 Fry bacon in coconut oil until crispy. Keep warm. Save bacon fat.
4 Boil cauliflower until al dente, appr 2-3 min.
5 Transfer cauliflower to a blender with cream cheese and butter. Blend until creamy leaving small pieces of cauliflower whole.
6 Add bacon fat + remaining ingredients except for bacon
7 Transfer cauliflower mixture to mixing bowl, add bacon bits and stir.
Serve as a side with meat or fish.
