1 Preheat oven to 350℉ (175℃)
2 In a mixing bowl or stand mixer whisk eggs and 1/3 cup erythritol until very fluffy (3-5 min)
3 Add rest of ingredients. Using a rubber spatula fold the dry ingredients into the egg mixture until fully incorporated. The batter should be thick and mud like.
4 Add chocolate chips and turn batter over a few times with the spatula
5 Pour batter into a greased loaf pan
6 Bake for 30-40 min. The cake is ready when not jiggly and feels firm to the touch. It may still be creamy in the center (like a lava cake). If you don’t want the center to be creamy check with a toothpick after about 30 min and then again every 5 minutes until it comes out completely dry.
Let cool and serve as is or with whipped cream
